Patasca Moqueguana

  Pastaca Moqueguana is a traditional dish from the Moquegua region of Peru. It is a delicious culinary preparation that combines local ingredients and traditional cooking techniques, resulting in a unique and tasty dish.

Ingredients:

- ½ kilo of lamb

- ½ kilo of pork belly

- ½ kilo of beef brisket

- 1 kilo of mote corn

- 1L  beef bone broth 

- 1 kilo of potatoes

- 3 tablespoons of ground chili pepper

- ½ kilo of white chuño

- 6 minced garlic cloves

- 1 teaspoon of annatto

 -Oil

 -Salt


Preparation:

 1. The first thing you must do to be able to prepare the recipe, cut the meat into small pieces and season it with a mixture of spices, such as ají panca, garlic, cumin and other aromatic herbs. It is then slowly cooked in a large pot of water or broth until the meat is tender and melts in your mouth.



   2. Once the meat is cooked, yellow potatoes, a variety of potato very popular in the region, are added to it and continue cooking until the potatoes are soft and absorb the flavors of the meat and spices. At the end of cooking, the moqueguana pastaca is served hot, accompanied by white rice and rocoto, a spicy chili pepper typical of the region.



   3. The result is a comforting and tasty dish. The meat melts on the palate and the potatoes acquire a smooth and creamy texture. The spiciness of the rocoto gives it a touch of warmth and spiciness, harmoniously balancing the flavors.

Lemonade

° 4 lemons.
° 80g sugar (you can really use any sweetener you prefer and in the amount you like, but that's how we make it)

° 500 g of ice cubes.

° 500 g of water.

 1. Wash a lemon very well, squeeze with your hands, until you get the juice, and place in the jar

 2. Then add water, and sugar (to your preference) mix everything, until dissolved.

3. To be able to decorate to your liking, put ice cubes and a mint leaf, so that it is delicious
