Picante de Cuy

The ¨Picante de Cuy¨ is dish traditional and amazing, whit ingredients, cuy, chily pepper, rice, potates, accompanying whit Leche de Monja.

Spicy guinea pig also called red guinea pig is an ancestral recipe from the Andes. Over the years, it has spread throughout Peru, consolidating it self as
one of the most popular dishes.

 




PREP  TIME: 20 MINUTES 

SERVING: 4 PEOPLES

INGREDIENTS:

2 GUINEA PIGS

2 TABLES POON MINSED GARLIC 

1/2 CUP OF GROUND CHILY PEPPER 

4 DICED ANIONS 

8 BOILED YELLOW POTATOES 

1 1/2 CUP CORNMEAL                                               

CUMIN                                                                               

SALT AND PEPPER 

OIL 

MANI(Optional)


PROCEDURE:

1. First, to begin, you must prepare the guinea pig. Clean and wash very well and proceed to chop it into about 4 or 5 dams. This will depend on its size and your preferences.

2. Next, put salt and pepper very well to all the pieces of the guinea pig. Next, pass it in cornmeal until it is well covered.

3. Put some oil in a pan and let it heat up. Insert the golden pieces well and remove them.

4. As soon as it is very hot, add the onion and let it fry, stirring constantly, for approximately 1 or 2 minutes, add the ground garlic, salt and pepper to taste. Stir again and cook for another 2 minutes.

5. After time, add the star ingredient: panca chili. Mix everything very well, lower the intensity of the heat and let this exquisite sauce cook for 15 minutes.

6. Finally, you can serve this delicious dish and enjoy with your family (accompanying with potatoes, rice, as you wish)
